Mio&Tuo

Mio&Tuo

Name: Spumante Rosato Demi Sec “MIO & TUO”
Vine variety: Malvasia Nera 100%
Location: Toscana–Montespertoli (FI)
Elevation: 200 m on sea level
Soil: pleistocene sands and clay
Harvest: hand-picked during the first week of september
Wine-making process: separation of the must from the skins by pressing, before the fermentation starts. Then we manage a low fermentation at stable temperature (15° C).
When the fermentation ends up, we start with sparkling process “Metodo Charmat” for two months
Color: cherry pink
Bubbles: thinny bubbles generated continuosly
Nose: very fine and fruity (cherry, peach, roseberry, violet, bougainvillea, but overall strawberry)
Taste: fresh, sapid and sweetness well mixed
Alcohol content: 12,5% vol.
Suggestions: excellent for dessert, thanks to its sweetness is appreciated with fruity cake (strawberry or roseberry cakes) , cream and chocolate mousse.
To be served: 8-10° C

Maiano Brut

Maiano Brut

Name: Spumante Bianco Maiano Brut
Vine variety: Chardonnay, Sauvignon Blanc
Location: Toscana–Montespertoli (FI)
Elevation: 310 m on sea level
Wine-making process: fine selection of the best Chardonnay and Sauvignon grapes and quick separation from the skin by pressing, slow fermentation (12-15 days) with temperature control at 15C. The wine gets than its bubbles with the Charmat method by adding selected yeast to the wine and kept for 6-8 months
Bubbles: thinny bubbles generated continuosly
Nose: floreal hints of broom, nutmeg and fruity as well as Kaiser pear and peach
Taste: fresh, smooth and harmonious
Alcohol content: 12% vol.
Suggestions: fish, seafood, fried vegetables, appertizers, white meat and every delight dish that tends to have sweet, fatty and creamy taste
To be served: 6-8° C

Vine variety: Malvasia Nera 100%

Among the passito wines, our Vinsanto stands out, aged for 3 years in chestnut casks. A Vinsanto that originates from the vines of Malvasia and Trebbiano Toscano, and which brings with it particular tones reminiscent of the withered fig and almond.
